
It happens – doesn’t it. We get stuck in ruts as we try to love our families and fuel our bodies.
For years I have struggled with lunch.
Between going to the gym, doing the housework, going to work and looking after family my day is full before I even look at it.
12 o clock arrives and I’m hungry, rushed and groaning because I have to choose “What’s for Lunch?” and I simply don’t want to.
So Tashy has been making these amazing salads for us, knowing we need stamina, energy, clarity of mind and bounce. So here’s one of her healthy go get ’em recipes.
Broccoli and Brown Rice Salad
1 Cup Brown Rice Cooked
Blanched broccoli
1 cup of spring onions
Half a cup of coriander
Punnet of cherry tomatoes
Half a cup of roasted sesame seeds
1 cup of roasted cashews
Pop all ingredients in a bowl and mix with Sesame Salad Dressing.
Sesame Salad Dressing
Half cup of Sesame oil
3 tbs of mirin or rice with vinegar
1tbs honey
Half teaspoon of cumin powder
Half teaspoon coriander powder
Salt and pepper to taste.
Allow the salad to sit in the Sesame Salad Dressing for at least 2 hours. The longer it sits in the dressing the better it will taste. The ingredients begin to infuse.
